El número de contratos firmados en hostelería en Andalucía ha caído un 72,2% desde julio, un descenso 3,2 puntos porcentuales menos pronunciado que la media nacional (-75,4%), según el informe realizado por Randstad Research.
Esto significa que, desde verano, se han dejado de firmar 41.992 contratos en hostelería en la comunidad, pasando de 58.124 a los 16.132 actuales. Hoy por hoy, Andalucía supone el 28% de todos los contratos del país que se firmaron en el sector, el mayor volumen a nivel nacional.

A nivel provincial, los mayores descensos en la contratación en hostelería se han producido en Cádiz (-80,8%), Granada (-80,2%), Almería (-79,2%) y Huelva (-74,2%), seguidos por Sevilla (-72,3%), Jaén (-65,6%), Córdoba (-59,2%) y Málaga (-45,2%).
Los mayores volúmenes actuales de contratos se registraron en Málaga (3.330), Sevilla (3.259), Cádiz (2.983) y Jaén (1.664). A continuación se encuentran Granada (1.553), Córdoba (1.267), Huelva (1.100) y Almería (1.086).

A nivel nacional, la contratación en la hostelería ha caído un 75,4% desde verano. Desde julio, se han dejado de firmar 176.182 contratos, pasando de los 233.752 a los 57.570 actuales.
Hace un año, el volumen de contratos en hostelería estaba en 290.908 firmas, pero la llegada de la crisis sanitaria provocó que descendiera bruscamente, registrando apenas 13.854 contratos en abril. En los siguientes meses, el indicador rebotó, aupado por el verano y la mejora de las condiciones sanitarias, registrando el julio los mencionados 233.752, la cifra más alta de la pandemia. Pero el encadenamiento de las olas pandémicas y la incertidumbre por las restricciones, han provocado que, con ligeros altibajos, el número de
contratos en hostelería registre desde verano una tendencia negativa, hasta mostrar el pasado febrero el tercer peor registro de la era covid.

El informe de Randstad detecta grandes diferencias a nivel autonómico. Con respecto a julio, Baleares (-92,8%), Galicia (-91,5%) y Cantabria (-88,1%) han registrado las mayores caídas en la contratación en hostelería. Las siguen, con descensos también más acusados que la media nacional (-75,4%), Asturias (-87%), Castilla y León (-84,8%), La Rioja (-83,5%), la Región de Murcia (-82,6%), la Comunitat Valenciana (-82,4%), Extremadura (-76,9%) y Catalunya (-76,6%).

En términos absolutos, Andalucía (con 16.132 contratos), la Comunidad de Madrid (8.928) y Catalunya (6.433), son actualmente las autonomías con mayores volúmenes de firmas en el sector de la hostelería, hasta el punto de suponer el 54,7%.
