La Delegación Territorial de Salud en Almería ha abierto una investigación para determinar el origen de la intoxicación y ha tomado muestras del atún para analizar su contenido en histamina, una sustancia que se forma cuando el pescado no se conserva adecuadamente y que puede provocar reacciones alérgicas.
La histamina es una amina biógena que se produce por la acción de bacterias sobre el aminoácido histidina presente en el pescado. Su consumo puede causar síndrome escombroide, una intoxicación que se caracteriza por síntomas gastrointestinales y cutáneos que suelen remitir en unas horas.

La Delegación de Salud ha recomendado a la población que extreme las precauciones a la hora de consumir pescado y que lo haga siempre en establecimientos autorizados y con garantías sanitarias.
